Winter Multigrain Porridge with Mango
The issue with spring marathons is that they commit you to long runs in nasty-cold-wet-dark winter weather. If you're lucky, you might come back from a run to find someone awesome has finished cooking and photographing delicious multigrain porridge. This is a good winter breakfast because it warms you up, and tastes like warmer climes :)
1/3 cup steel cut oats
1/3 cup amaranth
1/3 cup millet
1/3 cup quinoa
1 tbsp ground ginger
1 tsp cinnamon
1/2 tsp cardamom
1/2 tsp fine sea salt
4-5 dates, pitted & chopped, or 1/4 cup maple syrup
Rehydrated strips of dried mango
homemade sesame-coconut milk*
Soak grains overnight in a bowl of water with a tablespoon of cider vinegar. In the morning, rinse well and add to a pot with spices, sweetener and 4 cups of water. Bring to a boil over medium heat, lower to simmer for 20-30 minutes, then cover and let sit for another 10. Top with whatever deliciousness floats your boat.
*If you've never made nut/seed milk before, it's pretty easy and Sarah Britton's instructional video is the best way to learn. My current favorite (because cheap and delicious) is sesame-coconut. 1/4 cup sesame seeds, 1/4 cup dried coconut shreds & 4 cups of water.
